"Bowled Over," Indian Style

In an Indian home, one pot meals are ever inviting, always tasty, never lose their appeal for modern women with less time to spend in the kitchen. One-bowl meals, simple by design and typically vegetarian, consist of small portions of foods that include rice, protein in the form of a bean or lentil curry, and a vegetable. In an affluent kitchen, however, the bowls get more fashionable and elaborate. In this class, we will make both a simple meal of yellow dal, steamed rice and sautéed cauliflower, and a more elaborate bowl consisting of a popular dish called Ragda-Patties–a simple stew of whole yellow peas, just lightly spiced, served with potato patties, sweet onions, cilantro, sweet and sour date chutney and a pungent spice mixture called chaat masala. It’s a meal you don’t want to miss. Let’s get bowled over! Note: A $20 ingredients fee is payable to the instructor in class.Limited to 12.

Shruti Mehta has been teaching Indian cooking to Indian food aficionados for over 30 years. With Shruti, Indian food enthusiasts learn the inherent recipes of the foods of Northern, Southern and Western India’s distinguished cuisine. Her classes include field trips to the best local Indian Restaurants and Indian grocery stores, exploring the wealth of Indian Masalas (spices and spice blends) and other unique ingredients that make Indian food so rich and colorful. Shruti has demonstrated Indian cooking fundamentals and rituals at Peabody Essex Museum and other Indian venues. Her take-home simple recipes are always a hit with her students.
